You only need to install Eclipse if you intend to work on the source code.
To simply use the CSS UI, just download the zip with the executable.

By default, it’s configured to use the example font and color config files from the BOY examples, and the “Top OPIs” also links to the main.opi from the BOY examples.
To install those, use the menu CS-Studio/Utilities/Install Samples.

The menu Help/Help Contents should start a web browser, which then shows the help served by a web server inside CS-Studio.
That can sometimes run into problems on Linux, because on Linux there’s no canonical way to start a web browser. Haven’t seen such an issue on the Mac or Windows, so that would be a new one.
You could check the menu Edit/Preferences, section General/Web Browser. “Default System Web Browser” should be checked. If that doesn’t “work”, you may have to add a new entry that points to a web browser on your computer. On Windows and Mac it usually auto-detects Firefox etc. so you can simply select them, but in any case you can create a new entry “MyBrowser” and point that to some web browser that you happen to have on your computer.

I’m all for finding and then following a path to happiness.
For starters, finding the log file is easy. It’s the .metadata/.log file in the workspace, i.e. that folder which you select when you start CS-Studio.
You can view the content of that file via the menu Window/Show View/Other.. and then opening the General/Error Log, but opening that file in a plain text editor outside of CSS also works.
