For the record, turned out to be the tool.

The *.product file won't open in CSS itself nor in a plain JEE version of Eclipse.

There we go.  It looks like I had the wrong version of eclipse installed.  It is opening .product properly now with eclipse 3.7.0 for RCP/RAP development.

Do you have the Eclipse 3.7(.2) IDE for RCP/RAP development, and in there you're trying to open the product file?
Then maybe you have once opened it as a text file, so you'll have to right-click on the product file and select Open With.../Product editor to make it default to the product editor again.
